After the Fire … The Guildford Hotel reopened a few months ago now. The Hotel was destroyed by fire in 2008 and all that was left was the shell. Being Heritage Listed (1886) it was a long journey for the owners to reinvent this beloved Hotel.

I thought that by leaving things a few months I would beat the crowds. Not so, as Sunday saw the place packed with locals and sightseers. So much for that thought.

The place has been refurbished creatively. Instead of stamping out all traces of the fire, the fire plays an integral part in the décor. For instance, instead of recreating the various floors, they have left the Atriums the fire created. And those bold spaces let in the light. It really is breathtaking.

The exterior is cool and white, with verandas on all levels. The Hotel has always been a Landmark, now it is graceful and compliments the thriving Guildford community.

Seated myself in the outdoor area. The Bar extends into this space and there is a Water Station. Sat people watching in this pleasant space and enjoyed the brief spot of sunshine.

The Guildford Hotel caters for the busy crowds by having Food Ordering Stations throughout the building. This works very efficiently.

Simply had to order a Morton Bay Bug Roll and a Glass of Prosecco (Prizzini Lana).

It was a really lovely experience. My roll was delightful, the Seafood was tender, the Sriracha Mayo was flavoursome. Definitely something I would return to eat. They even added potato crisps and a dill pickle. Yum.

There is a large section of the menu dedicated to “Low and Slow” Smoked Stuff (their words). Particularly like the sound of the “Beer Can Chicken” so must stage a return visit at some point.
